PB & Jelly Donuts

A classic duo. A match made in heaven. It's peanut butter and jelly. DONUTS. Check out the recipe for these protein donuts below. 

Ingredients

  • 1/4 cup ICONIC Vanilla Bean protein powder 
  • 1/4 cup PB2 powdered peanut butter
  • 2 tbsp. coconut flour
  • 2 tbsp. organic stevia blend (1/4 cup baking stevia or sugar)
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt optional
  • 1/2 cup 4 large egg whites
  • 1 tbsp. peanut butter
  • 1/4 tsp. butter extract optional

Topping

  • 1/4 cup PB2 powdered peanut butter
  • 3 tbsp. water
  • 2 tsp. peanut butter
  • 1 tsp. organic stevia blend = 2 tsp. baking stevia or sugar
  • 3 tbsp. sugar free jam
Steps
  1. Preheat oven to 325 degrees F.
  2. First whisk together dry donut ingredients in a mixing bowl.
  3. Next mix in the remaining wet ingredients to form a thick dough.
  4. Lightly coat three wells of a donut pan with cooking spray.
  5. Spoon dough into a Ziplock bag and cut off one corner. This makes it easier to pipe dough into prepared wells.
  6. Bake for 8-12 minutes until a toothpick or knife inserted comes out clean.
  7. While donuts cool, mix together peanut powder, water, peanut butter, and sweetener to make a peanut butter frosting.
  8. Spread peanut butter frosting over donuts and smother with sugar free jam. Enjoy!
