PB & Jelly Donuts

Ingredients
- 1/4 cup ICONIC Vanilla Bean protein powder
- 1/4 cup PB2 powdered peanut butter
- 2 tbsp. coconut flour
- 2 tbsp. organic stevia blend (1/4 cup baking stevia or sugar)
- 1/2 tsp. baking powder
- 1/4 tsp. salt optional
- 1/2 cup 4 large egg whites
- 1 tbsp. peanut butter
- 1/4 tsp. butter extract optional
Topping
- 1/4 cup PB2 powdered peanut butter
- 3 tbsp. water
- 2 tsp. peanut butter
- 1 tsp. organic stevia blend = 2 tsp. baking stevia or sugar
- 3 tbsp. sugar free jam
- Preheat oven to 325 degrees F.
- First whisk together dry donut ingredients in a mixing bowl.
- Next mix in the remaining wet ingredients to form a thick dough.
- Lightly coat three wells of a donut pan with cooking spray.
- Spoon dough into a Ziplock bag and cut off one corner. This makes it easier to pipe dough into prepared wells.
- Bake for 8-12 minutes until a toothpick or knife inserted comes out clean.
- While donuts cool, mix together peanut powder, water, peanut butter, and sweetener to make a peanut butter frosting.
- Spread peanut butter frosting over donuts and smother with sugar free jam. Enjoy!
