Chocolate Chip Protein Cookies

These chocolate chip cookies taste delicious with an added protein boost to keep you fueled throughout the day. We'll take 3.. 

Ingredients:

  • 2 cups Old-Fashioned oats (we have also made these with almond flour as a substitute)
  • 30 grams ICONIC Vanilla Bean protein powder (approx 1/4 cup)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 6 tbsp unsalted butter softened
  • 1 tsp vanilla
  • 1 egg
  • 1/2 cup sugar
  • 1/4 cup semi-sweet chocolate chips (add 1/2 cup if you are a chocolate lover)
  • Sprinkle of sea salt 

How to make the cookies:

  1. First, preheat oven to 350 degrees.
  2. Next use a food processor to finely grind one cup of the oats into a flour.
  3. Combine ground and whole oats, protein powder, baking soda, and salt in a small bowl & set aside.
  4. In a mixing bowl, mix the softened butter and sugar together until creamy.
  5. Add the egg and vanilla to the mixing bowl & mix.
  6. Add the dry ingredients into the mixing bowl.
  7. Stir in the chocolate chips by hand.
  8. Scoop cookies into balls onto a cookie sheet lined with parchment paper or a baking mat.
  9. Slightly pat the cookies down with your hand, as they don't spread too much on their own. Sprinkle with sea salt. 
  10. Bake for 8-10 minutes, until the bottoms are just lightly starting to brown. Enjoy!
